Sail covers!

    There is no such thing as a 'standard pattern' because each junk rig boat is going to be different in things such as halyard attachment point on the yard. But if you have the old sail covers that is a good starting point for making new covers. They are a lot of work to make, I know I have made two sail covers for junk rig yachts. And with all the effort involved it is advisable to use good quality fabric which is going to last for a few years. Velcro fasteners can be used in place of zips, in fact Velcro is a lot better.
